The Drunken Sailor | Grilled Cheese Sandwich of Blue Cheese, Sharp Cheddar Spread with Port Wine, and Horseradish Cheddar, grilled with Butter, Sea Salt, and Fresh-Cracked Pepper

STILL TRYING TO SHOW THE diversity of different cheese through the long-honored magic of grilled sandwiches, I set upon myself this morning to create my second all-cheese grilled cheese sandwich. (The first one, the "Old Smokey", can be seen here.)

As I have also previously noted, the food universe has been besotted by a re-interest in the comfort food, vying for individual attention by competing for the most outre non-cheese ingredients to throw into the sandwich. Pshaw, I say, and let the cheese return to its original glory of proudly speaking for itself!

So after the earthy, woodsy charms of the "Old Smokey", I came up with this recipe for The Drunken Sailor, with blue cheese, sharp cheddar and port wine spread, horseradish cheddar, on rye with salt-and-fresh cracked pepper-seasoned butter.

"The Drunken Sailor is not for the feint of heart, as it has almost overwhelming character, but great treasures are eventually rewarded the stalwart. You expect the Drunken Sailor to have the crusty exterior of a seasoned salt, just like the edge of the bread and the fried, melted cheeses that adhered to it. But then you're hit with his boozy breath, an aroma that take over more senses than it's supposed to. You try to placate him with patience, but that only angers him, as he becomes suddenly punchy with blue cheese stankiness. And, yes, he has a sharp-tongue as well, with the sharp cheddar biting back at you right before you're made aware of the horseradish's fiery passions, warming you from the inside out until your eyes start to water with nostalgia as your nasal passages unceremoniously start to clear.

I wound up very much enjoying my time with the Drunken Sailor. He made it difficult to get through to him, but the journey of my efforts were their own reward. I will always fondly remember the Drunken Sailor, and look very much forward to testing my patience with him again very soon!" END
