TORTILLA EGG TOAST | Queso Fresco, Fresh Cilantro, Chili Powder

I HAD PLENTY OF INGREDIENTS left over from the tacos I made the other day in honor of a dear friend (And Cinco de Mayo), including small flour tortillas and queso fresco.

So I decided to put them to good use for breakfast by butter toasting a tortilla shell in a pan with butter, then topping it off with a soft-fried egg, some of the queso, fresh cilantro, and chili powder.

It was a quick and very delicious dish for the morning, and part of what I'm now calling TORTILLA TUESDAY as this was one of three dishes I had this day that involved tortillas.

And what a yummy day it was!
