MY STEP-MOTHER HAS ENJOYED Saltine crackers with her ice cream ever since she was a little girl. I, of course, used to think she was nuts. Then the fooderati got all into salting their caramels and chocolate milk—successfully, eventually—and it wasn't a big leap for me to come up with these yummy treats: Ritz® Cracker Mini Chocolate Ice Cream Sandwiches. (Especially since I don't have an "aggressive" sweet tooth.)

So the buttery, salty, crisp-ity crunch of the Ritz cracker is a superb compliment to the rich, creamy cold sweetness of the chocolate ice cream! (I've actually used flaky biscuits as the "bread" for ice cream sandwiches as well; equally good!)
