Pimento & Scallion Omelet Stuffed with Tuna Salad | Garlic-Butter Skillet Potatoes
KNOWING BETTER THAN TO EVER food go to waste, I whisked some eggs with chopped scallions and pimento, poured them into a buttered pan, stuffed the omelet with leftover tuna salad from last night's dinner, and served it with the one last potato I had, which I cut into big dices and sautéed in a skillet with butter, garlic, celery salt and fresh cracked pepper.

A hearty breakast it was—and yummy as well—giving me not just the energy but the positive disposition as well to finally take a decent stab at cleaning my apartment!
