Nutty Fruit Poppers: Deep-Fried Soda-Battered Peanut Butter-Covered Blackberries
I HAVE A NEIGHBOR IN my building who delivers fruits and vegetables and has on more than one occasion in the last week dropped of some very fresh blackberries and blueberries. I have gone through all the blueberries—either right out of the container or tossed into my morning Corn Flakes—and was on my last container on blackberries last night when I decided, since I have to bartend this morning, I would not let the sit in the fridge for another two days but, instead, make a nice week ending dessert with them!
I smeared each blackberry with a little bit of peanut butter, then dropped into into a batter of flour, a little bit of cornmeal, a few drops of vanilla (extract), and a few shakes of powdered sugar, cinnamon, and nutmeg.
I then threw them into a pot of hot corn oil for literally 20–30 seconds tops—these suckers cook fast!—then placed them on some paper towels to dry, arranged them on a small plate, sprinkled them with some extra powdered sugar while they were still hot
You can threw these one at a time into your mouth; the crunchy, slightly crystallized exterior breaks to let out a small explosion of concentrated berry flavor accented by the familiar aromas and taste on now hot and gooey peanut butter.
As I ate these, I thought about the many other fruits that would be served well by this preparation. Strawberries, even bananas (bacon wrapped?!?!?!) would make excellent options.
