Grilled Shrimp Sandwich | with Hickory-Smoked Bacon and Spicy Peanut Sauce | (Terra™ Exotic Harvest® Sweet Onion Kabocha, Carrot, and Blue Potato Chips)
ONE OF THE LUXURIES OF cooking for yourself is being able to reward yourself for a job well done—or for just having a great day—when most other folks have to make reservations and fight crowds and lines to spoil themselves with a grand meal elsewhere outside of their home.
I had one such great day yesterday, with the temperatures hitting almost 80° here in the city, receiving a surprise second interview on a job hunt, and reconnecting with one of my favorite people in the full history of my whole life. With such a day, I decided I deserved something special for a late lunch/early dinner.
That something special would be a grilled shrimp sandwich (one much like the one I thoroughly enjoyed at the now long-closed former hot restaurant spot Kampuchea. My shrimp sandwich would likewise boast the same "exotic" flair.
I started with a prep of a spicy peanut sauce, consisting of peanut butter, mustard, soy sauce, ginger, sriracha, cider vinegar, finely chopped garlic and ginger, and a hit of fish sauce. Meanwhile in a skillet I grilled three slices of bacon until slightly crispy and removed them to set on some paper towels.
I then sautéed thinly-sliced shallots in the fat rendered from the bacon, later removing the shallots and then tossing the large shrimp quickly in the shallot-flavored bacon fat for a couple of seconds with some chopped fresh thyme. I finished the shrimp by "grilling" the large shrimp 2-3 minutes on each side in the skillet to give them some flavorfully caramelized edges.
On a butter-toasted bottom half of a roll, I spooned on some of the spicy peanut sauce, then topped with the grilled shrimp, then the shallots, then bacon, then more spicy peanut sauce, then some fresh arugula leaves, completing the whole sandwich with the top butter-toasted roll half.
A dynamically delicious sandwich, each bite bursted with a variety of exotic flavors, and excitingly enjoyable textures and temperatures. A bag of Terra "exotic blend" kabocha, carrot, and blue potato chips. It all made for a n attractive-looking dish, and great-tasting sandwich, and a great way to honor and celebrate all the good fortune I enjoyed yesterday.
