Deluxe Food MarketON A MOST RECENT TRIP to the Deluxe Food Market in CHINATOWN, along with a Silky "black" chicken I used for a most delicious yet unusual looking dish, I purchased a container of duck eggs. I had only gone for the silky chicken (which the more I say it the more it sounds like a dance from the 70s), so the duck eggs were an impulse buy.

Duck Eggs and Truffle MousseHaving never eaten DUCK eggs before, it took me about a day to decide what I wanted to do with them. I surely was in the mood to elevate more commonly pedestrian dishes, hoping these EGGS would provide a more luxurious taste to simple preparations. And I would add to the haute level of the cuisine by incorporating some truffle duck liver mousse paté where I best saw fit.

So I first made deviled duck eggs, taking the cooked yolks and mixing them with the TRUFFLE mousse paté, some dijon mustard, cider vinegar, and salt & pepper. I was so anxious to finally taste them that I didn't bother with straining, chilling, setting, and pipng the mixture. I just spooned it back into the hard-boiled egg whites and topped with dried parsley.

They were earthy, aromatic, heady, and delicious. Am now looking forward to doing the properly in the very near future.

The only problem was that that prep didn't allow to taste the pure essence of the duck egg itself, unadulterated. So the next morning I decided to soft-fry the duck eggs. And being sure to still get some use out of the leftover duck liver mousse paté, I smeared some of the paté of the the toasted halves of a poppy seed bun, then just lay one butter-fried sunny-side up duck egg on each half.

The warm runny yolk was able to showcase the full breadth of duck eggs many taste properties. It was a more layered and concentrated with egg flavor than a chicken egg, and not so much "gamier" as it was woodsier, but in a very mellow way. The duck liver mousse providing that expected sweet gaminess, in turn perfectly tempered by the earthy sweet aromatic of the truffled speckled through it.

There were so many other wonderfully "exotic" and unconventional food options available at this Deluxe Food Market just a 15 minute train ride down to Chinatown. But much like this first visit, no matter what unusual ingredient I venture there seeking, I will probably always come back with these glorious orbs likewise in tow.

Maybe I'll try a duck egg leek & wild mushroom quiche and a duck egg salad next time....
