Salmon Pot Pie | Baked Salmon and Smoked Salmon with Oyster Mushrooms, Snow Peas, Red Potatoes, Sweet Corn, Fresh Dill, Grain Mustard, and Cognac, Topped with Puff Pastry
THIS WAS ANOTHER INSTANCE WHERE I had a recipe stuck in my head—like a song—for several days, having to, this morning, commit myself to executing the recipe by post on the PHUDE-nyc Facebook Page that that was my plan for the day.
I finally bought all of the ingredients around 4 o'clock, getting home soon after, sautéing shallots and the oyster mushrooms in olive oil and butter, adding flour to color to a nice roue, then adding water, clam juice, and lemon juice, and potato, stirring to thicken while seasoning with pepper and celery salt.
Next went in the snow peas—cut into strips crosswise—the corn, and fresh dill to start them cooking before finally adding about a shot of cognac, several teaspoons of grain mustard, heavy cream, and small pinches of ginger and chili powders.
To finish I added a half cup of heavy cream, and while letting that reduce, cut a full side of fresh Alaskan salmon filet into large cubes as well as cut some packaged smoked salmon into thick strips. Those went into the pot for the last couple of minutes, stirring gently, before going into ramekins and being topped with puff pastry brushed with chili powder and fresh-cracked pepper-seasoned egg wash.
The final product emerging from a 375° oven about 20 minutes later, and after cooling for about 5 minutes, provided a great, tasty version of pot pie nostalgia, with added layers of a nicely balanced depth of flavor, complimented by the various textures of the still snappy peas and toothsome corn, the firm potatoes, the earthy chew of the oysters.
Add to that the melange of flavors and aromas: the rich mustard with the soft, small pearls of punch, the cooling ginger, the kicky chili, the verdant dill, and the heady cognac, all of which bouyantly supported the flavors of the mouthful bites of the salmons without once overwhelming or masking them.
I look very much forward to having this song/recipe stuck in my head again sometime very soon!
