...Fresh turkey was sliced thin, letting more air into each bite, which helped supply more of its flavor. Crispy pieces of porky, salty proscuitto accented the white meat turkey, nicely mellowed by the slightly sharp, cheesy sauce. Perfectly sunny-side up eggs oozed warm and silky over the whole yummy goodness, held up quite nicely by the sturdy Texas toast underneath and robust tomatoes. Ham, eggs, and cheese. ...The jalepeño·barbecue burger dog was a bit more of a revelation, if only in the dressing. I had never made that before, but after the first few bites of its smoky, tangy, sweet, and creamy properties—heightened by the acidic heat of the jalapeños, I immediately started to imagine all other future applications for it. ...Both were tasty; the Italian-themed one serving up some nice homey and familiar old world tastes, the other a cornucopia of textures, temperature, flavors, all of them brightly explosive, almost, with neither of the hotdogs' toppings overwhelming or masking the well-seasoned, snappy, juicy meat.... ...Not as rich, thick, or even sweet as traditional baked beans, these had as many tastes, if more subtle, and because of the shorter cooking time, the beans kept much of their firm texture while still being able to absorb much of the garlic's flavor, as well as the hints of mustard and tarragon. ...The hot dogs being longer than the buns they were on, I was able to try a bite of just weiner. They were good—Psilakis' recipes both—and possessed the texture of homemade sausages. But, again, they kind of clashed with the remedially lowf-fi food "comfortability" of the toppings, especially the Chicago dog, which excelled on the toppings but were better suited for a Sabrett's....
