The Initial Entry Of A New Series
...Taste-wise, the sandwich boasts porky, salty, fatty, sweet, savory, bitter, acidic notes that excite pretty much every type of taste bud on the tongue, with the added bonus of some wonderful aromatics coming off the back of the mouth and up through the nose. Texture-wise, the sandwich boasts smooth, creamy, fleshy, crunchy, crispy, wet, dry, grainy, toasty, which delights every other part of the mouth, like the teeth and gums, and tongue as well. Add to all that as well the sizzling bacon, hot tomatoes, warm tomatoes, cool cider mayo, and ice cold lettuce, and you've got a sandwich that hits on every level.... [Full Post »]

Surf & Turf's Up
...I made a tuna tartare, mincing fresh raw tuna with soy sauce, salt, pepper, scallions, fish sauce, and ginger. I chilled the tartare while skillet-grilling an Angus tenderloin steak and making a hollandaise sauce incorporating wasabi paste and a little bit of mustard. After the steak was done and sat for a few minutes, I topped it with the chilled tartare, topped that with a sunny side up egg yolk, and spooned the wasabi hollandaise on top.... [Full post]
The Early Bird
...The vinaigrette also added nuance to the earthy, herbal chicken meat, brightening the meat's flavor with its hits of vinegar, as the red pepper flakes balanced the natural sweetness of the green beans and woke up the corners of my mouth, like a jolt of coffee, preparing me for the rest of my day... Mushroom With A View
...I still had some fresh sour cream and a half container of white mushrooms, which I sliced and sautéed in some butter. I then spooned them into a omelet—of whisked eggs, salt, pepper, and dried basil, oregano, and tarragon—along with a couple spoonfuls of sour cream (with an extra dollop on top with some black lumpfish caviar).... Just Enough Time To Eat and Share
...But I still have just enough time to cook at home, so here I share with you this morning's breakfast (that I shared with a lovely friend of mine—just had to get that in!)... [cont.]
Quick Post | He's Got Legs
...Later, I placed the legs in a large casserole, spooning the remaining sauce on top, and placed them in a preheated oven. Meanwhile, I emptied a can of black beans into a small pot, adding some liquid smoke (available in most supermarkets), worchestshire sauce, soy sauce, sriracha sauce, brown sugar, salt and pepper, stirring them on low heat while preparing white rice.... Frankly, My Dear....
...Not as rich, thick, or even sweet as traditional baked beans, these had as many tastes, if more subtle, and because of the shorter cooking time, the beans kept much of their firm texture while still being able to absorb much of the garlic's flavor, as well as the hints of mustard and tarragon. A nice, hot, stick-to-your-ribs dish—without being heavy—and a nice compliment to an otherwise cold, rainy winter afternoon.... [Full post]
A Self-Serving Meal
...I then threw the sausage back in and deglazed the bottom of the pan with 3/4 cup of balsamic vinegar, then poured in 3 cups of chicken broth. I tossed in some chopped tomatoes, chopped scallions, and some basil, tarragon, and rosemary, first bringing the liquid to a boil, then reducing the heat to a medium low.... [Full post]
Friday Night Fish
...I marinated two tilapia filets in the sauce, then broiled them in the over, brushing on extra sauce every 5 minutes or so, and plated them with some rice I prepped with some turmeric, yellow mustard, and lime juice, and some lima beans in butter and tarragon leaves.... [Full Post]
Quick Post | Rib Tickling

Quick Post | First Meal of the New Year...
...Lucky enough, I made enough to enjoy for the whole day, since I don't see myself leaving my apartment—or my bed—for the next 24 hours... [cont.]
Still Thankful, Days Later....
....So I had a whole turkey leg—perfect, white and dark meat!—and some smoked ham, both leftover from the Thanksgiving meals I bought for myself locally while I hibernated for the rest of the holiday weekend. Monday, I ventured to Food Emporium (where I happily ran into two, separate dear friends, Emily, and Deidre, who I both know from the bar where I work) to get the rest of the ingredients for me to make my Good Housekeeping-style recipe:.... Orzo I Would Hope….
...But when I know I’m just cooking for one, it cuts down my ingredients portions by at least half, which means I usually will have half boxes of uncooked this and half bags of raw that are not just left, but left undone. Although inconvenient, storage-wise, this predicament also forces me to be creative on a whim to make good use of these yet unused ingredients, especially the perishables. [cont.]
