The New Fish Dish
Still excited about the new menu items at Dorrian's Red Hand, in some part due to my having input into it. So now they/we offer—as part of their/our expanded entrée menu—a Teriyaki-Glazed Pan-Seared Salmon Filet, that is served over a crisp, warm salad of julienned veggies and some roasted potatoes.

"...And even though I am admittedly a recent convert to enjoy having a warm runny egg yolk over any number of foods, even here, the egg was not the extracurricular afterthought I've accused it of becoming on many a cooking show; the yolks' silkiness tethered the acidity of the pickled, crispy, julienned vegetables, so every bite finished harmoniously...." L'Afrique? C'est Chic!
...A plentiful and aromatic dish, this was another tasty winner. You could really taste the melange of flavor influences, a hint of mustard in the marinade, some sweeter spices—nutmeg maybe—mixing with spicier ones, and the barely-on-the-bone lamb, with its deeper but not gamier flavor, possessing the quality of imparting its leaner meat's flavor, as well as its fatty flavors (most meats really heavily on its fat content alone for flavor).... Swimming to Cambodia
...Amazingly, after forkfuls and handfuls of these bold flavors, the mackerel dish succeeded in showcasing the inherently more nuanced properties of the warm and light, flaky fish and its crisp, slightly seasoned skin, topping a melange of a colder salad that stood well on their firm textures and naturally clean and earthy aromatics.... Energy Kitchen
...There was a lot more to enjoy than previous incarnations of "healthy burgers" I've had in the past, the ostrich meat while quite lean, possessing a decent meat flavor without any gaminess. Crisp carrots and lettuce added nice texture and moisture, rounded out by aromatic hints from the whole wheat bun and a little "zing" of flavor from the packet ketchup I put on top.... [Full post]
Letters From Home
...The chopped lettuce with carrots then got mixed with a teaspoon of mustard, red wine vinegar, lemon juice, salt, pepper, and honey. Two slices of toasted cornbread slices got smeared with mayo with cider vinegar stirred in, the slices of tomatillas sautéed in butter, the BBQ bacon slices, and slaw, with the pea salad spooned on the side.... Do You Know Wot?
...All of it contained great flavors, even with some spice combinations being a little foreign to me. the meat dishes each had tender proteins, spiced for flavor and heat, and complemented well by the bread. The vegetable dishes were more mildly seasoned, but let their true taste characters come through.... [Full post]
A Peachy Good Midtown Lunch
...Fresh, bright, crispy, crunchy, smooth, creamy, hot, warm, cool, porky, salty, sweet, spicy, herbal, acidic, heady, yummy! Those were the words that not only best describe how tasty and fun-to-eat this sandwich was, but also prompted my to remember them so I could include them all in this post!... [cont.]
Easy Does It
...I decided to cook something enjoyable with a minimal amount of effort. So some chicken breasts get simply seasoned with salt, pepper, garlic powder, and paprika and placed in an oven at 325°, Rice gets stirred into a pot of boiling water, chicken stock, a couple dashes of lemon juice, and salt—with a leftover half box of frozen peas and carrots tossed in for nutriment and color—the gets covered and left to simmer.... Still Thankful, Days Later....
....So I had a whole turkey leg—perfect, white and dark meat!—and some smoked ham, both leftover from the Thanksgiving meals I bought for myself locally while I hibernated for the rest of the holiday weekend. Monday, I ventured to Food Emporium (where I happily ran into two, separate dear friends, Emily, and Deidre, who I both know from the bar where I work) to get the rest of the ingredients for me to make my Good Housekeeping-style recipe:....
