Unexpected Gem

...The portion was more dinner sized, and, again, my skepticism was foiled by an ample amount of chicken meat, and scant traces of MSG or cornstarch. The dish, while delivering on its promise of spice, was refreshingly light, with the impressive rice noodles, rightfully gummier and spongier than regular noodles, making any residual cooking juices get absorbed into them while the flavored oils clung to them. Alas, the practicality, the chef argued, of Peel & Eat shrimp is that it presents less prep for the kitchen—no peeling by the sous chef—so he decided to scrap using shrimp, and instead use already "prep"-able—and "spice"-able on the fly—grilled chicken and/or steak, and has made an admittedly delightful and tasty version of what we will be calling Pub Tacos ... Saintly Pizza

...I am always surprised to find that most people don't know where the name Two Boots comes from. Both the country of Italy and the state of Lousiana are shaped like boots, so the food represents most Italian-style pizza reinvented with more traditional Louisiana foods, such as crawfish, andouille sausage, spicy peppers, and their indigenously ubiquitous cornmeal, which is the base flour in their pizza dough.... Eggs Alaric

...I fried two egg yolks (with some residual egg white still on them) sunny side up in another skillet. I placed the warmed egg yolks on top of the smoked salmon, spooned some of the truffled hollandaise on top of the egg yolks, and garnished each with a small sprig of fresh dill and the end-of-a-spoon-tipful of black lumpfish caviar....
